Thai Peanut Grilled Shrimp Cabbage Wraps

Ingredients
  • 1/2 lb shrimp, peeled and deveined
  • 1 medium carrot, julienned
  • 1 medium scallion, chopped
  • 1/2 medium cucumber, diced
  • 1/4 cup peanuts
  • 1 medium lime
  • cilantro, chopped
  • 1/2 head Napa cabbage
  • 1 jar peanut sauce
  • sriracha sauce
  • 1 piece ginger (1 inch), grated
Directions
  • Chop all veggies.
  • Grill or sauté shrimp until cooked through.
  • Mix peanut sauce with sriracha, and coat shrimp.
  • Place shrimp in cabbage or lettuce wrap and top with carrots, scallions, cucumber, peanuts, ginger, lime juice, and cilantro.
