Turkey Roll-ups

1/4 lb sliced deli turkey
1/2 medium cucumber, sliced into matchsticks
1 medium tomato, diced
1 medium carrot, grated
1/4 medium avocado, sliced
2 tbsp hummus or mustard

Place cucumber, tomato, carrot, and avocado on top of a slice of turkey. Drizzle with oil and vinegar, top with hummus or mustard and roll it up!
