White Mushroom Hummus

1 cup coconut oil
3 cups sliced mushrooms
1/2 onion
1 cup garlic cloves
1 can garbanzo beans
1/2 cup tahini paste
2 lemons, juiced
2 tbsp fresh parsley, chopped

Preheat oven to 425. Place sliced mushrooms, onions and garlic cloves onto a baking sheet. Season with salt/pepper and drizzle mushrooms with coconut oil. Roast in oven for 15 minutes or until tender but brown. Make sure to check and stir mushrooms halfway between cooking to prevent burning. Remove from the oven and set aside to cool. Using a food processor or blender, combine garbanzo & tahini paste and pulse on/off for a few seconds. Add 3 cups of roasted mushrooms with garlic cloves, process until smooth. Pulse parsley, lemon zest & juice. Enjoy with carrots, celery, cucumber and/or your favorite veggies!
