Apple Cider Vinaigrette

Gwyneth Paltrow's It's All Good Cookbook

1 tbsp Dijon mustard
3 tbsp apple cider vinegar
2 tbsp grade B maple syrup
1/2 cup extra virgin olive oil
sea salt, to taste
black pepper, to taste

Whisk together the mustard, vinegar and maple syrup in a mixing bowl. While whisking, slowly drizzle in the olive oil. Season to taste with sea salt and pepper. Keeps well in a jar in the fridge for up to a week.
