Chicken Salad with Grapes and Walnuts

Ingredients
1/2 lb chicken breasts
1 stalk celery, diced
4 radishes, chopped
1/2 cup grapes, halved
1/4 cup walnuts, chopped
1-2 tbsp Dijon mustard
1-2 tbsp sweet relish
sea salt, to taste
black pepper, to taste
2 bay leaves
1 tsp Old Bay seasoning

Directions
Bring a large pot of seasoned water to a boil (add sea salt, bay leaf, Old Bay). Add chicken breasts and boil until cooked through (approx. 20 minutes for frozen). Cut into one of the breasts to make sure there is no pink in the middle. Meanwhile, chop veggies, grapes, and walnuts and place in a large bowl. Remove cooked chicken from the pot and allow to cool. Shred chicken (easiest with a fork in each hand) and add to the bowl. Season with S&P. Add condiments (mustard, relish). Combine all ingredients. Taste along the way and add as needed.
