Cranberry Pistachio Pancakes
So good you don't even need syrup!
- 1/2 medium banana
- 1/2 cup dry rolled oats
- 2 egg whites
- 1 tsp cinnamon
- 1 tsp vanilla extract
- 3 tbsp dried cranberries
- 3 tbsp pistachios
- 1 tbsp cacao nibs
- 1 tbsp coconut oil, melted
- Heat oil in a large pan over medium heat.
- Combine all other ingredients and stir until combined. (You can also process the banana, oats and egg whites in a blender first, then add the remaining ingredients)
- Pour batter onto pan and brown on both sides.
- Serve with fresh fruit and enjoy!
