Cranberry Pistachio Pancakes

So good you don't even need syrup!


Ingredients
  • 1/2 medium banana
  • 1/2 cup dry rolled oats
  • 2 egg whites
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 3 tbsp dried cranberries
  • 3 tbsp pistachios
  • 1 tbsp cacao nibs
  • 1 tbsp coconut oil, melted
Directions
  • Heat oil in a large pan over medium heat.
  • Combine all other ingredients and stir until combined. (You can also process the banana, oats and egg whites in a blender first, then add the remaining ingredients)
  • Pour batter onto pan and brown on both sides.
  • Serve with fresh fruit and enjoy!
