Ingredients
  • 1 tsp ghee
  • 2 eggs, fried or soft boiled
  • 1/2 cup broccoli or green beans
  • 1 cup kale, deveined
  • 1/2 cup cooked quinoa
  • 1 tbsp coconut aminos
  • 1/4 avocado, diced
  • 1 tbsp pepitas, toasted
  • 1 tbsp sprouts
Directions
  • Heat ghee in a small skillet.
  • Fry (or soft boil) eggs.
  • Meanwhile blanch or steam kale and broccoli (or green beans) until heated through.
  • Place quinoa and veggies in a serving bowl.
  • Top with egg, avocado, pepitas, and salad sprouts.
  • Drizzle with coconut aminos.

1 bowl
