Protein Pancakes


Recipe by

  • 1/2 medium banana
  • 1/2 cup rolled oats
  • 2 egg whites
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 1 tbsp coconut oil
  • Optional: fresh fruit, dried fruit, sliced nuts, cacao nibs (add into batter or use to top pancakes)
  • Place banana, oats and egg whites in a blender and process until a batter-like consistency is reached.
  • Heat oil in a skillet over medium heat and pour batter onto the skillet.
  • Wait for bubbles to appear then flip and cook on the other side until cooked through.
  • Top with desired toppings and enjoy!
