Green Goddess Dressing

Gwyneth Paltrow's It's All Good Cookbook

10 basil leaves
3 tbsp chives, chopped
2 tbsp cilantro
1/4 cup Italian parsley
1 sprig tarragon
2 scallions, white and green parts only, chopped
1/2 medium avocado
1/4 cup vegenaise
2 tbsp raw, local honey or xylitol
1/4 cup fresh lemon juice
3 tbsp extra virgin olive oil
1/4 cup filtered water
1/2 tsp sea salt
1/4 tsp black pepper

Combine all the ingredients in a powerful blender and blitz until completely pureed. Keeps well in a jar in the fridge for up to a week.
