Green Tahini Sauce
- rounded 1/4 cup/80 g tahini
- 3/4 cup/15 g parsley, roughly chopped
- 1 small garlic clove, crushed
- 1/2 cup/80 ml water
- 3 tbsp lemon juice
- flaked sea salt
- Pour the tahini into the small bowl of a food processor along with the parsley and garlic. Blitz for about 1 minute, until the tahini is green, then pour in the water and lemon juice and season with 1/4 tsp of flaked salt. Continue to blitz until you have a smooth green sauce with the consistency of heavy cream. Add a touch more tahini if it's too thin, or a splash more water if it's too thick.
This is a delicious sauce to serve with cauliflower. It will keep in the fridge for up to 3 days.
