Chicken Cacciatore

Ingredients
  • 1 medium onion, minced
  • 1/8 cup tomato paste
  • 1 tbsp ghee
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/4 oz dried porcini mushrooms, rinsed and minced
  • 1/8 tsp red pepper flakes
  • 3/4 lb cremini mushrooms, trimmed and halved
  • 1/2 14oz can diced tomatoes, drained
  • 1/2 cup chicken broth
  • 1 lb chicken thighs
  • 1/8 cup chopped basil
Directions
  • Place all ingredients, except the basil, in the crockpot.
  • Cook on low for 4 to 6 hours.
  • Top with fresh basil, and enjoy!
