Quinoa Bison Hash Quinoa Bison Hash

Ingredients
1/2 lb ground bison
1/2 medium sweet potato, diced
1/2 can kidney beans, drained and rinsed
1/2 medium onion, diced
1 clove garlic, minced
2 cups spinach or kale
1 tbsp coconut oil
1/2 cup quinoa, uncooked
sea salt, to taste
black pepper, to taste
1 tsp onion powder
1 tsp garlic powder

Directions
Add quinoa to 1 cup of water and bring to a boil. Reduce heat and simmer for 10 to 15 minutes. Meanwhile, heat coconut oil over medium-high heat in a large saucepan. Add sweet potatoes and saute' for 2 to 3 minutes. Add onion and garlic and continue to saute' until sweet potatoes are tender. Add bison and heat until cooked through. Add kidney beans, greens, and spices. Stir to combine and continue to saute' until all ingredients are heated. Stir in quinoa and serve!
