Baked Ziti

Recipe by Everyday Paleo Around the World

  • 1/2 medium butternut squash, cut into 1/4-inch thick and 2-inch long pieces
  • 1/2 tbsp ghee
  • 1/4 lb mild Italian sausage, casing removed
  • 1/4 lb hot Italian sausage, casing removed
  • 1/2 small onion, diced
  • 2 cloves garlic, minced
  • 1 14oz can whole tomatoes
  • 1/4 cup coconut milk (canned)
  • 1/2 tbsp oregano
  • 1 tsp thyme
  • 1 tbsp fresh basil, chopped
  • sea salt, to taste
  • black pepper, to taste
  • Preheat oven to 350 degrees.
  • In a baking dish, evenly spread the butternut squash.
  • In a large soup pot, heat the ghee over medium heat and crumble in the sausage.
  • Add the onion and cook together until the sausage is browned.
  • Add the garlic and cook for another minute or two
  • Add the tomatoes and bring to a simmer, breaking up the tomatoes with a spoon.
  • Add the coconut milk, oregano, thyme, and basil, and season with salt and pepper.
  • Stir well and bring to a simmer for another 5 to 7 minutes.
  • Pour the sauce evenly over the butternut squash.
  • Bake uncovered for 40 to 45 minutes or until the squash is fork tender.
