Baked Ziti

Ingredients
- 1/2 medium butternut squash, cut into 1/4-inch thick and 2-inch long pieces
- 1/2 tbsp ghee
- 1/4 lb mild Italian sausage, casing removed
- 1/4 lb hot Italian sausage, casing removed
- 1/2 small onion, diced
- 2 cloves garlic, minced
- 1 14oz can whole tomatoes
- 1/4 cup coconut milk (canned)
- 1/2 tbsp oregano
- 1 tsp thyme
- 1 tbsp fresh basil, chopped
- sea salt, to taste
- black pepper, to taste
Directions
- Preheat oven to 350 degrees.
- In a baking dish, evenly spread the butternut squash.
- In a large soup pot, heat the ghee over medium heat and crumble in the sausage.
- Add the onion and cook together until the sausage is browned.
- Add the garlic and cook for another minute or two
- Add the tomatoes and bring to a simmer, breaking up the tomatoes with a spoon.
- Add the coconut milk, oregano, thyme, and basil, and season with salt and pepper.
- Stir well and bring to a simmer for another 5 to 7 minutes.
- Pour the sauce evenly over the butternut squash.
- Bake uncovered for 40 to 45 minutes or until the squash is fork tender.
