Green Goddess Dressing

Recipe by Gwyneth Paltrow's It's All Good Cookbook

Ingredients
  • 10 basil leaves
  • 3 tbsp chives, chopped
  • 2 tbsp cilantro
  • 1/4 cup Italian parsley
  • 1 sprig tarragon
  • 2 scallions, white and green parts only, chopped
  • 1/2 medium avocado
  • 1/4 cup Primal Kitchen mayo or veganaise
  • 2 tbsp raw, local honey or xylitol
  • 1/4 cup fresh lemon juice
  • 3 tbsp extra virgin olive oil
  • 1/4 cup filtered water
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
Directions
  • Combine all the ingredients in a powerful blender and blitz until completely pureed.
  • Keeps well in a jar in the fridge for up to a week.
