Green Goddess Dressing
Recipe by Gwyneth Paltrow's It's All Good Cookbook
Ingredients
- 10 basil leaves
- 3 tbsp chives, chopped
- 2 tbsp cilantro
- 1/4 cup Italian parsley
- 1 sprig tarragon
- 2 scallions, white and green parts only, chopped
- 1/2 medium avocado
- 1/4 cup Primal Kitchen mayo or veganaise
- 2 tbsp raw, local honey or xylitol
- 1/4 cup fresh lemon juice
- 3 tbsp extra virgin olive oil
- 1/4 cup filtered water
- 1/2 tsp sea salt
- 1/4 tsp black pepper
Directions
- Combine all the ingredients in a powerful blender and blitz until completely pureed.
- Keeps well in a jar in the fridge for up to a week.
