Chicken Salad with Grapes and Walnuts

Ingredients
- 1/2 lb chicken breasts
- 1 stalk celery, diced
- 4 radishes, chopped
- 1/2 cup grapes, halved
- 1/4 cup walnuts, chopped
- 1-2 tbsp Dijon mustard or canola-oil free mayo (homemade, or Primal Kitchen brand!)
- 1-2 tbsp sweet relish
- sea salt, to taste
- black pepper, to taste
- 2 bay leaves
- 1 tsp Old Bay seasoning
Directions
- Bring a large pot of seasoned water to a boil (add sea salt, bay leaf, Old Bay).
- Add chicken breasts and boil until cooked through (approx. 20 minutes for frozen).
- Cut into one of the breasts to make sure there is no pink in the middle.
- Meanwhile, chop veggies, grapes, and walnuts and place in a large bowl.
- Remove cooked chicken from the pot and allow to cool.
- Shred chicken (easiest with a fork in each hand) and add to the bowl.
- Season with S&P.
- Add condiments (mustard, relish).
- Combine all ingredients.
- Taste along the way and add as needed.
