Chicken Salad with Grapes and Walnuts


Recipe by

  • 1/2 lb chicken breasts
  • 1 stalk celery, diced
  • 4 radishes, chopped
  • 1/2 cup grapes, halved
  • 1/4 cup walnuts, chopped
  • 1-2 tbsp Dijon mustard or canola-oil free mayo (homemade, or Primal Kitchen brand!)
  • 1-2 tbsp sweet relish
  • sea salt, to taste
  • black pepper, to taste
  • 2 bay leaves
  • 1 tsp Old Bay seasoning
  • Bring a large pot of seasoned water to a boil (add sea salt, bay leaf, Old Bay).
  • Add chicken breasts and boil until cooked through (approx. 20 minutes for frozen).
  • Cut into one of the breasts to make sure there is no pink in the middle.
  • Meanwhile, chop veggies, grapes, and walnuts and place in a large bowl.
  • Remove cooked chicken from the pot and allow to cool.
  • Shred chicken (easiest with a fork in each hand) and add to the bowl.
  • Season with S&P.
  • Add condiments (mustard, relish).
  • Combine all ingredients.
  • Taste along the way and add as needed.
