Avocado Egg Salad

Ingredients
- 5 hard-boiled eggs
- 1/2 large avocado, diced
- 1/2 cup celery, diced
- 1-2 tbsp spicy or Dijon mustard
- 1/2 tsp curry powder
- sea salt, to taste
- black pepper, to taste
- dried cranberries, for garnish (optional)
- walnuts, toasted and chopped, for garnish (optional)
Directions
- Allow eggs to cool.
- Chop into small pieces.
- Combine all ingredients and fold/stir to incorporate.
- Season as needed.
