Avocado Egg Salad

Ingredients
  • 5 hard-boiled eggs
  • 3/4 large avocado, diced
  • 1/2 cup celery, diced
  • 1-2 tbsp spicy or Dijon mustard
  • 1/2 tsp curry powder
  • sea salt, to taste
  • black pepper, to taste
  • dried cranberries, for garnish (optional)
  • walnuts, toasted and chopped, for garnish (optional)
Directions
  • Allow eggs to cool.
  • Chop into small pieces.
  • Combine all ingredients and fold/stir to incorporate.
  • Season as needed.
