Quinoa Bison Hash

Ingredients
- 1 lb ground bison
- 1 medium sweet potato, diced
- 1 can can kidney beans, drained and rinsed
- 1 medium onion, diced
- 2 cloves of garlic, minced
- 4 cups spinach or kale
- 2 tbsp coconut oil
- 1 cup quinoa, uncooked
- sea salt, to taste
- black pepper, to taste
- 2 tsp onion powder
- 2 tsp garlic powder
Directions
- Add quinoa to 2 cups of water and bring to a boil.
- Reduce heat and simmer for 10 to 15 minutes.
- Meanwhile, heat coconut oil over medium-high heat in a large saucepan.
- Add sweet potatoes and sautee for 2 to 3 minutes.
- Add onion and garlic and continue to sautee until sweet potatoes are tender.
- Add bison and heat until cooked through.
- Add kidney beans, greens, and spices.
- Stir to combine and continue to sautee until all ingredients are heated.
- Stir in quinoa and serve!
