Quinoa Bison Hash

Ingredients
  • 1 lb ground bison
  • 1 medium sweet potato, diced
  • 1 can can kidney beans, drained and rinsed
  • 1 medium onion, diced
  • 2 cloves of garlic, minced
  • 4 cups spinach or kale
  • 2 tbsp coconut oil
  • 1 cup quinoa, uncooked
  • sea salt, to taste
  • black pepper, to taste
  • 2 tsp onion powder
  • 2 tsp garlic powder
Directions
  • Add quinoa to 2 cups of water and bring to a boil.
  • Reduce heat and simmer for 10 to 15 minutes.
  • Meanwhile, heat coconut oil over medium-high heat in a large saucepan.
  • Add sweet potatoes and sautee for 2 to 3 minutes.
  • Add onion and garlic and continue to sautee until sweet potatoes are tender.
  • Add bison and heat until cooked through.
  • Add kidney beans, greens, and spices.
  • Stir to combine and continue to sautee until all ingredients are heated.
  • Stir in quinoa and serve!
