Thai Peanut Grilled Shrimp Cabbage Wraps

Ingredients
- 1/2 lb shrimp, peeled and deveined
- 1 medium carrot, julienned
- 1 medium scallion, chopped
- 1/2 medium cucumber, diced
- 1/4 cup peanuts
- 1 medium lime
- cilantro, chopped
- 1/2 head Napa cabbage
- 1 jar peanut sauce
- sriracha sauce
- 1 piece ginger (1 inch), grated
Directions
- Chop all veggies.
- Grill or sauté shrimp until cooked through.
- Mix peanut sauce with sriracha, and coat shrimp.
- Place shrimp in cabbage or lettuce wrap and top with carrots, scallions, cucumber, peanuts, ginger, lime juice, and cilantro.
